  9. Lunch today: sweet potato and black bean tacos, and pineapple.

ETA: the seasoning is sauteed onion, then salt and garlic powder.
I cook the sweet potato first, sautee onion until brown, add diced sweet potato, cook until starting to brown, then add black beans. I use a little water to keep from sticking, but I let it dry out nearly completely between adding the water. I have also added in past: cumin, canned green chilies, diced bell pepper, mushrooms, chopped spinach.

    Lunch today: sweet potato and black bean tacos, and pineapple.
