Lunch! Rainbow chard and a masala veggie patty (trader joe’s of course). The chard recipe is from Everyday Happy Herbivore and is the only way I’ll cook chard now. And, the chard itself is from my friend’s garden. I just walked out there with a pair of scissors and cut off a huge bunch of leaves! That was a lot of chard, like 4 cups after it was chopped. hmmm, not so much on my plate! I could eat the chard with corn bread and call it a meal, it’s SO GOOD!
I’m tempted to grow a bit of chard for myself when I get home.
