Easy breakfast: potatoes and black beans, cantaloupe.
I try to keep precooked (I cook them myself) vegetables around for easy meals. For the potatoes, I sauteed onion in a non-stick skillet, then added pre-cooked cubed potato and seasoned with salt, garlic powder and cayenne pepper. when the potatoes are lightly browned, I add the black beans and stir together until hot. (1/4 of a small onion, diced, 1 small potato, 1/2c black beans…seasonings to taste)
